The ideal Christmas cake for people that don't really like Christmas cake, our take on traditional Jamaican Black cake gives you all the spiced rum goodness without any of that stodgy pudding vibe.
This cake itself is fed repeatedly with Appleton Estate rum, and is made with a paste of raisins which have been floating in a box of rum, topped up periodically since November 2017. They are very, very drunk by now.
This is a deep, single layer cake, served without filling, for 8 - 10.
